Happy humpday everyone! My mind has officially left DC and headed for Europe one week ahead of time- I can’t think about anything but wine, Michaelangelo, and people watching. Le sigh.

Do all Romans look like Monica Bellucci? I hope so.
Yesterday afternoon I snacked on a coconut cream pie Larabar before leaving work. It was all right, but didn’t taste particularly coconutty or creamy to me.

I enjoyed a nice long walk to get some extra prescriptions filled in anticipation of my trip, and settled down to a late dinner that was far simpler than Monday’s pasta orgy.

Just a lovely salad filled with fresh ingredients- lettuce, spinach, onions, grape tomatoes, carrot, cucues, and shrooms, topped with ff ranch, lemon pepper, and moutard. So crunchy and delightful.

And a cup of rice with a little lite soy sauce.

For dessert, I had a fruitgasm. I chopped up 2 fresh peaches that were at the peak of their ripeness and was totally overwhelmed by how incrdibly sweet, tart, juicy, and delicious they were. These pictures do the flavor no justice.


This morning, I had my trusty overnight oats. A reader recently asked about my recipe, which is 1/2c. oat bran soaked overnight in 1/2-3/4c. Unsweetened Vanilla Almond Breeze. In the morning, I add tons of cinnamon, stevia, a dollup (maybe 1/4c?) 0% Fage, and a banana. Eating it is like eating a rich, creamy, dream.


This morning’s snack was eaten on the balcony in my office- another offensively delicious peach!


I got juice all over and had a chance to enjoy the gorgeously warm sunshine. I am just about to head off for a lunch here at work (a working lunch) and apparently there will be vegan pizza available. I prepared by bringing a sandwich (just in case the pizza is ick- I’ll eat it when I return), and just ate a little tupperware of steamed kale and an unpictured Fuji- I still have a little appetite for some vegan pizza, but won’t need to have like 3 slices since I’ve already bulked up on fiber.

Off to lunch- have a great afternoon!

Thanks for the ovenight oat recipe, I’ve been wanting to make some this summer and have been browsing everyone’s ideas. Since I prefer oat bran, I think I will try yours first
