Seasonal Eats

Hiya!  I need to backtrack to yesterday’s afternoon snack, and it was (surprise!) 1/2c. Fiber One and 1/2c. cottage cheese.  As always, LOVE it.

Dinner was a huge switch from the norm for me.  Normally I make Mike some type of meat (chicken, salmon, etc) and choose to have a veggie burger or beans for myself, but last night I made a big pot of Turkey Chili and after tasting it to test the seasoning, I knew that I really wanted to enjoy some myself!  Served with brown rice and a a big salad.

It was fabulous!  I simply browned up 1.3 lbs of ground turkey in a pot with evoo, diced onions, and celebery, and seasoned it with s and p and chili powder.  When the meat was brown, I added 2 cans of no-salt added tomatoes, 1 can of no-salt added black beans, and a ton of seasonings- cinnamon, cilantro, chili powder, red pepper, cajun seasoning, ketchup (!), and red pepper flakes.  I let it it simmer for about 40 minutes, and it was fantastic!

I managed to steal a couple more spoonfuls of this while cleaning up the kitchen :) .  Although I choose not to eat meat daily, I do love how filling it can make a meal!  I feel that as I do more cooking for 2 (and obviously when I become a mom) I will eat more chicken/fish, just because it will be easier.

This morning, I was super hungry for my pumpkin oats, which turned out a little watery, so I had to slice the banana in after eating some- same old 1/2c. oats, dollup of pumpkin, 1c. water, cinnamon, and splenda.

And an apple this morning for a snack, as per usual!

I have been thinking about how good winter-time foods have been making me feel lately- oatmeal, spicy chili, hot soup, cooked veggies, etc.  It feels really good to eat season-appropriate food for ultimate satisfaction!  I am going to continue to think of this as I plan my meals over the coming weeks- I hope to incporporate some new variety and fun into my diet!

  • Mmm, chili!!

    I agree about eating seasonally – I always eat about 90% raw in the summer months, and about 70% in the current/winter months. Makes me feel GOOD!! :-)

  • I commented awhile back but have just been lurking lately. Anyways, I’ve definitely noticed you’ve upped your food intake lately (in a good way!). Was this intentional or did you just start eating instinctually and do you notice that you have more energy? Great blog!

    Hey Meghan- love it when people delurk, and thank you for your comments! Yes, I think I have increased my food intake lately. I think it has been a combination of things. First, my life has been a whirlwind of parties and celebrations recently, and I have chosen just to live in the moment and enjoy whatever comes my way. Second, I have stopped counting calories and have chosen instead to listen to my body and try to satisfy myself according to how I feel. To be honest, I have gained some weight (less than 5 lbs) since, say, July, but I think I needed to gain it- I’m just not built like I wish I were. And if- in order to be stick skinny- I have to consume 1500 calories a day and exercise nonstop and be unhappy, it’s probably not the best choice for me. So yes, I am eating more, and I have more energy and feel better than I have in a long time! Thanks for reading and for your support. Writing this blog is really helping me appreciate good health, and having all the support you guys give me helps me know that these good habits are a life-long commitment. So here’s to carbs, listening to your body, and living (and dressing) well!

  • Sometimes I do the same thing when cooking for my BF – I make him something “meaty” and I have something else, but every once in a while what I make for him seems super good and I eat that too!

    And in response to your last comment – I actually think you are eating very well lately :) That is a healthy mindset to have.
