Hi bloggies! Now that I know I am keeping my job, a huge weight has been lifted off my shoulders- although I feel horrible for all those who have been laid off both within my institution and elsewhere.
Yesterday, my “carb coma” satisfied me so much that I didn’t even need an afternoon snack- what a rarity! Normally, I start jonesing for my snack at like 3:00- an hour before I eat it! However, I was good and hungry for what proved to be a spectacular dinner. Mike and I went to Surfside, a brand new restaurant in my neighborhood that specializes in fresh food infused with Mexican and New England flavors. Now, I will be the first to admit that the decor is horrible. It has these icky floors that remind me of the girls’ bathroom from elementary school and it is absolutely freezing in there since both doors open directly into the restaurant across from one another, but the food is fabulous!
We started with a small guacomole- I had 2 chips with guac- it had huge chunks of avocado in it, which is just the way I like it.
I got a “make your own” salad with consisted of a bed of organic mixed greens, grilled portabellos, grilled red onions, cherry tomatoes, queso fresco, and green goddess dressing on the side.
This was fantastic! I used about half the dressing (dipping my fork into it when I needed a kick), and loved every bite- the onion and portabellos were such a treat, and this was my first time trying queso fresco, and let me tell you- I love it! It reminds me of a combination of those cheese curds you can buy in Wisconsin and feta. So fabulous!
Breakfast this morning was a simple bowl of oats made with 1/2c. oats, 1.5 cups water, pumpkin pie spice, stevia, and half a teeny banana (the other half was bruised). As always, a nourishing way for me to begin a busy day. Just look at that steam!

Hope you guys are having good Thursdays and are looking forward to Turkey Day! I can’t WAIT to see how we all deal with what some consider the biggest day of gluttony of the year!

I’m glad to hear you are safe with your job! It’s so sad I feel like everyday I hear another person got laid off, it’s becoming so normal its not even shocking anymore! That salad sounds good!
Kind of a random question, are you thinking of having a DC wedding? Or are you guys going to get married back home?
