I woke up this morning excited to have my very favorite NJ delicacy- BAGELS. You all know that carbs/bread are my life, and real bagels may be my very favorite variety! Here’s my breakfast- 1/2 a cinnamon raisin bagel with peanut butter and fig jam and a banana. Perfect.
Lunch will most likely involve some really fresh local produce- see you then!
I endedup going out to lunch with Mike and his grandparents, so no photo, but I had a panini with roasted eggplant, provolone, and a pesto mayo. It was great to spend time with them, and I almost never order paninis when I go out- this was was quite enjoyable! Here’s a facsimile:
When I got home, I was desperately craving produce to round out the meal, so had some celery/carrot sticks, and one of the first apples of the season from Vermont, which was truly archetypal in its flavor. I swear, I only feel really satisfyied when I have carbs, protein, fat, fruit, and veggies in every meal!
Dinner was fabulous, as per usual. We started off with some flax crackers from TJ’s and some Vermont cheeses (brought back from a recent parental vacation). Here’s the crackers with an aged cheddar and a Camembert. They were excellent.

Dinner consisted of fresh corn on the cob, grilled whole wheat naan, and a grilled teryaki beef spinach salad, also from Ellie Kruger’s book.
The beed was excellent- it had been marinated just long enough and was grilled with just 5 min. per side, and the spinach was so fresh and crispy!
How could one not have seconds of this delicious meal?

Dessert was a fresh plum clafoutis with a thin plum sauce on top. Yes, it certainly had its fair share of butter in it, but was well worth it!

Mike and I enjoyed a drink with some friends later, then called it a night- he had to get up early to fly out of Newark for half the week

Fun! That bagel looks yummy, and I love your plates/bowls….the one containing the banana slices is so cute!!

I have to admit that NJ has some pretty great bagels. Especially warm. Yummmm. I am in NJ this weekend too by the way.

Your panini sounds fantastic. I definitely agree that well-rounded meals are always the most satsifying. When I’ve had a wide range of tastes, textures and nutrients in your meal, I always feel so satiated.
