I took an early train up to NJ this morning and had to get breakfast on the Amtrak, which luckily had something remotely healthy- a yogurt, a banana, and black tea.
The blueberry yogurt/banana combo was quite delicious!

Due to a relatively small breakfast, I was quite hungry for lunch with my family. I had a big salad with honey mustard and balsamic on top, and a bowl of Chobani (o%, about 1/2c.?) with a plum and some peanut butter granola (little more than 1/2c.).
MMmmm.
And some grapes.
After this I was still hungry, so I had a rice cake with some PB and apricot jam. Scrumptious and filling- I think I just needed a little healthy fat!
Now to make a healthy and delicious mother with my mom- the best, healthiest cook on the planet!
And my best friend, of course.
Dinner was absolutely phenomenal. We had Yukon gold potatoes with garlic and evoo, a delicious green bean salad, fresh yellow tomato slices from the backyardand, and fresh flounder baked with a remoulade sort of sauce.
The green bean salad is from Ellie Krieger’s What You Crave cookbook and features green beans, dijon mustard, red wine vinegar, parsley, evoo, and walnuts. The flavors married together amazingly. I think this would be even better cold the next day to really bring out the taste.

Man, is my mom ever the best cook! I say when a meal is this good, one must have seconds.
I also had a few extra nibbles while doing the dishes.
Now, to spend some time with Mike and our friends from town, then I am looking forward to sleeping next to my puppy tonight- hope you all are having a great weekend!

Have a great time at home! I love being able to come home and visit my family. I really miss them when I’m away!

Those green beans look great! I haven’t tried that recipe yet, but I’ll be sure to bookmark it. Seriously, I don’t think I’ve come across a bad recipe in the book so far.
