After a long and stressful week, I am thrilled that the long weekend is here. I kicked off the day using the remainder of foods in my house for an amazing breakfast: 1/3c. plain soy yogurt topped with 1/2c. cinnamon raisin Good Friends cereal and half a banana, and the other half banana dipped in 1.5T peanut butter and agave. Heaven. I will definitely be having this in the am in the future!
For some reason, this breakfast didn’t hold me over quite as well as oats, and I was starving for lunch, so I scarfed down a delicious meal: a wrap, some chopped veggies, and a peach.
Here it my wrap pre-eating- a whole wheat tortilla spread with homemade hummus, then collards, tomatoes, some dollups of goat cheese, and honey mustard.The goat cheese made this wrap truly delicious.
And for dessert- a homemade cookie that a co-worker brought in. Normally I would resist but I was still hungry after eating lunch, and I savored every bite.

I got hungry at the end of work, so had half of this bad of fruit and nut mix, which was so sweet and delicious- I felt energized afterwards and had a great mat pilates class afterwards at Joy of Motion in Dupont.
I was starving for dinner, and made a tofurkey sandwich and a huge salad with honey mustard dressing.
My sandwich had honey mustard, hot sauce, lettuce, and grilled onions. I wish I had a little more tofurkey though, because it didn’t fill me up!
So I snacked on one…

Three (not pictured) huge handfuls of pretzels. I am now full and loved my salty weekend snack even if it wasn’t terrible healthy. Next time I write to you all I will be in NJ with my family and dogs! Hope you all are having a great start to your weekend!

goat cheese is sooooo yummy. good idea with putting it in a wrap! i’ve only had it with spinach in a salad or on a pizza mmm

Oats are the super food! I felt the same way the ONE morning I ate cereal.. haha.
