August 28. 2008: Bad Anna!- Updated

So I did something highly unlike me this morning- I overslept!  Luckily I was able to get ready at record speed (without perfectly applied makeup, I’m afraid), pack up my breakfast, and haul my butt out the door so I was only a couple of minutes late.  But still- tardiness is not me.  And my beloved overnight oats unfortunately weren’t nearly as enjoyable in front of my inbox faced with the overwhelming amount of work I have today!

At least I’m well rested…

Lunch is being eaten as I write this, and is a direct replica of yesterday’s- rice and beans (<1c. brown rice, ~1/2c. pinto beans) with hot sauce, chopped veggies, and a juicy peach.

Today I enjoyed the rice and beans so much mroe because I microwaved them- perfect for this drizzly, rainy day.  Look at that steam!

I have a boatload of work to do- hope you all are having a good day!

Um, I also managed to eat 2 of these today- one right after lunch (I was still hungry!) and one at the end of the day when I got hungry again.  I wish I had access to some yogurt/fruit instead.  Sometimes it’s really annoying that I don’t have any place near my office that I can run to quickly to grab something healthy!

So after a tiring and far-too-long day at the office, I knew I needed to make myself something healthy but incredibly comforting.  I also had particular foods I needed to use up because of my lack of grocery shopping this week.  So I improvised a delicious and healthful meal- Pasta with Sweet Onions and Goat Cheese.  It was fantastic and I enjoyed making it while listening to 80s music- what a way to unwind!

First, I “grilled” (broiled) a whole, thinly sliced onion -that was sprayed with a little evoo spray andrubbed with salt and an Italian herb mix- until the onions were charred at the sides.  Then, I heated up <1 tsp. evoo, and dropped the onions in, turning down the heat way down so they would soften and sweat.  While I did this, I put my water on to boil and prepared a serving (2 oz.) of whole wheat penne. 

Then I added lemon juice (1.5 tbsp.), tons of minced garlic (perhaps 1.5 cloves), and a swirl of agave.  I let the onions absorb all these flavors and cooked the mixture for about 4 more minutes.  Then, I added the  drained and perfectly al dente penne to the pan, and then added about 1 oz. goat cheese, and a little sprinkle of nutritional yeast.  Then I salted and (cracked red) peppered to taste.

This was amazing!  Grilling the onions kept them from being too sweet and retained a hearty flavor, the goat cheese perfectly cut the lemon, the red pepper added a little kick, and the agave rounded the dish out perfectly.  This was so comforting and tasty!

Altogether with my standard huge salad.

For dessert, I had a peach and the last of a container of blueberries.

This was just the meal I needed.  Now, other than a banana for breakfast, I officially have no produce in my house!  Good thing I am going home to NJ for the weekend (leaving on Saturday)- I can’t wait to see my parents and dogs!
