That is the goal of my humpday today. I started out with a return to my very favorite meal, overnight oats made 1/2 c. oats, almond milk and 1 T. flax soaked overnight and 2-3 T. plain soy yogurt, nutmeg, I frozen banana, and Stevia today.
For some reason, I really really really wanted peanut butter after my meal so I put some on half a whole grain roll.
My monster breakfast held me over for 5 hours when I broke for lunch- a baggie of chopped cucumber, yellow zucchini, carrots, radishes, and mushrooms, rice and beans (<1c. brown ride, ~1/2c. pinto beans, hot sauce), and a peach.

My afternoon snack was a Roasted Almond Crunch Kashi bar. Boy was this good- there is nothing I love more than sweet carbs in the afternoon.
Dinner tonight was a no-fail meal. It was a repeat from Monday- I apologize for the more-monotonous-than-usual meals this week. I haven’t had a chance to go to the grocery store! Anyway, this balanced meal featured a big big salad with homemade light Goddess dressing, a whole wheat roll with goat cheese and olive oil for dipping.
And for dessert, one of my favorite treats, a yogurt parfait. This had about 1/3c. plain soy yogurt, a sliced peach, and 1/2c. cinnamon raisin Good Friends cereal. A perfect, crunchy, sweet end to my meal.
So happy the week is now coming to an end!

I get the urge for PB after EVERY meal – seriously! I think I’m going to start eating a tiny spoonful after each meal so that I can have some all day long!

When you do the overnight oats, do you heat it up in the morning or eat it cold?

The veggies in the baggie are calling out to me! I want to eat something crunchy so badly. It looks like a fabulous day of food so far!

Breakfast without peanut butter just isn’t quite complete for me!
How did the rice and beans lunch work out for you? I think beans are my favorite lunch food of all time.

Hi Christie- I eat the oats cold- they are so refreshing! I also fo this bc of time- if I have something hot, I want it piping hot, and then it takes longer for me to eat. Even though it isn’t the best practice, I eat my breakfast really really quickly!
Hil- they held me over pretty well- I think it’s the combo of fiber and whole foods that really does it!

mmm!! beans and rice!! i have yet to try pinto beans like that…i normally use black beans or chickpeas! something new to try!! and you just used hot sauce? sounds good!
and i love good friends cereal! i like the raisins esp!

Again a cocktail dessert. LOVE it.
And goat cheese and bread and olive oil combo sounds amazing. Will be incorporating into my diet soon.
