So I tried something new for breakfast today- rice pudding made with some leftover brown rice. I put <1c. cooked brown rice in a pan with about 1/2 c. almond milk, vanilla, and nutmeg and let it simmer for about 20 minutes last night while I had dinner. Then this morning, I added 1/3c. plain yogurt, 1 frozen banana and some stevia, then microwaved it for about 3 minutes, and added a spoon of pb. Um…

Yes, I am aware that that photo is not appetizing in the least. It tasted ok, though- very banan-y. I also had a small donut peach.

Even though it wasn’t delicious, the rice pudding held me over quite well until lunch, which consisted of goat cheese, lettuce, onion, and collards on Ezekiel bread, chopped yellow zucchini, mushrooms, carrots, radishes and cucumber, and a peach.

The sandwich wasn’t too delicious either- the goat cheese and tomato almost cancelled each other out (sort of neutral flavors). This would have been way better with salt or some pesto.
I have to make sure my dinner has something exciting and delicious to make up for 2 mediocre meals! At least they were healthy….
So in the pm at work, I snacked on Barbara’s Bakery animal crackers in the fantastic chocolate chip flavor.
For dinner, I was let down by a rough day and needed something seriously comforting and sweet to liven my spirits. So wilted a huge amount of collards with some evoo, garlic, lemon juice, salt, and pepper, and had a whole wheat English muffin with PB and chocolate chips.
Definitely a weird dinner combination, but I wanted my all time favorites. The warm greens were so hearty and the English muffin was, as always, a ridiculous treat.
Even though the “main” part of my dinner was dessert-y, I still had dessert, too! 1/3 c. plain soy yogurt topped with frozen mango chunks, blueberries, and 1/2 c. cinnamon raisin Good Friends cereal. Delish.
I still was feeling munchy after dinner, and finished off my bag of frozen mango chunks and had a peach. Sorry- I just didn’t feel like taking a picture!
Now to settle into my favorite pajamas and sleep off a tough day.

Thanks, guys. Fitz- eh. I think I need a much better recipe. It tasted like brown rice with milk mucrowaved. I think I want a creamier, fluffier consistency and perhaps I might prefer it cold.
I would love suggestions for the future, if you guys have them!

maybe add vanilla. I think that makes everything tasier. Or half rice half oats?
Also, I remember Tina @ carrotsncake doing breakfast rice awhile back, so maybe check there.

I think I am just hesitant to use rice in my breakfast. Don’t know why though because I love the chewiness of wheat berries in the morning, so I would think I would like rice. I do like the half oats/half rice suggestions though.
