July 26, 2008: Perfect Saturday- Updated to Include Dinner

Breakfast this morning was my absolute favorite- omelettes filled with sauteed vegetables and bagels.  Here are the veggies cooking.

Here’s my plate.  I made my omelette using 2 eggs, 2 egg whites, 1/2c. vegetables, and put about 2 t. of vegetable cream cheese on a whole wheat bagel.  Amazing.

I woke up this morning happy to be hungry for my overnight oats- creamy and refreshing.

July 24, 2008: Productive Thursday

This morning started out with 1/2 c. oats, 1 T. flax, and some nutmeg that I had soaked overnight in 1/2c. lite vanilla soy milk.  Everything absorbed perfectly, and I just heated everything up and added a sliced banana for breakfast.  Easy and tasty!

July 23, 2008: Feeling Better

I woke up this morning feeling a whole lot better and thoroughly enjoyed my overnight oats.  I changed it up a bit this time, and added my flaxseed the night before- result- fabulous!  The flax seed really helped “puff” the oatmeal up!
