Here is my first post! I am looking forward to sharing my meals with the blogging world!
I had a favorite meal that is voluminous and quick: instant brown rice with lite soy sauce with some satueed collard greens. I make these with garlic, a little olive oil, barbeque sauce, and red wine- after the greens have cooked down, they get incredibly sweet and have a great chew to them. I also had a huge green salad, which is a usual component of dinner. I like to add all kinds of vegetables to my salads for variety and interest- cabbage, lettuce, spinach, collard greens, corn, tomatoes, carrots, cucumber, celery, and onion! This was topped with Annie’s Goddess dressing, a favorite in the healthy food blogging world for good reason- it is incredibly delicious! I recently started using it instead of balsamic vinegar or fat free dressing in an effort to add some more healthy fat in my diet, and am so happy I have. My salads are much more satisfying now! After eating this array of veggies and whole grains, I wanted something sweet, so had a small green apple.

Off to bed- I am so excited for tomorrow. My boyfriend and I are going to see “Prince Caspian.” I have been waiting for this movie to come out ever since “The Lion, the Witch and the Wardrobe!”
